The simplest way to do this in ODP is to have separate products for each color.

Alternatively, you could add a "color" field to the order item database, then modify the order entry form and pick ticket-invoice forms to show it.

For more control over the colors available per product, you would need to do a bit more work. You would need to add a color_per_product database that lets you define the colors available per product, then use that database for the list of options for the color field in the order item database.

Any of these modifications can be done for you by us, if you like, for a fee. We can give you a quote on these things!
